Tahini: From Sesame Seeds to a Raw Material for Sweets

Tahini is a staple food in many Arab countries, made from roasted and ground sesame seeds.

The tahini production process begins with the peeling of sesame seeds to separate the kernels from the husks. Then, the sesame seeds are roasted for 2-3 hours at a temperature of 150-200 degrees Celsius.

After that, the sesame seeds are left to cool, then ground to obtain tahini.

Tahini is mainly used in the production of sweets, such as tahini halva, knafeh, and baklava. It is also used in many other dishes, such as hummus, falafel, and soups.
